What you will need


  • 1kg beef brisket

  • 2 tbsp bbq sauce

  • 30g Tex rub

  • 100ml beef stock

  • 30ml olive oil

  • Pico de gallo

  • Guacamole

  • Rice

  • Quartered tortillas or tortilla chips

  • Slaw

  • Sour cream

  • Coriander


Method

  1. Coat both sides of the beef brisket in Tex rub and olive oil, rub in to the beef and let rest for 30 minutes
  2. In a pot add bbq sauce and beef stock then add the beef to the pot
  3. Place in the oven at 160 degrees / gas mark 3 for 4 hours
  4. Once beef is done, shred with two forks and mix in to the sauce
  5. Add to each bowl with some of each topping whether store-bought or homemade and enjoy!
