What you will need


  • 2 chicken breasts

  • 30g Tex rub

  • 15ml cooking oil

  • 6 mini tortillas

  • 50g grated cheese

  • Coriander

  • 4 tbsp FreshMex Chipotle salsa


Method

  1. Dice the chicken breasts into cubes and coat with Tex rub
  2. Fry the chicken in oil until cooked and remove from the pan
  3. Add the mini tortillas in to the hot pan along and add the cheese and chicken to one side of each taco
  4. Fold and flip the tortillas then open and add the red onion and corriander
  5. Serve with a side of Chipolte salsa for dipping
