What you will need


  • 2-3 chicken breasts

  • 400g orzo

  • 750ml chicken stock

  • 3 peppers

  • 1 onion

  • 30g Tex rub

  • 1 jar chipotle salsa

  • 1-2 tbsp cream cheese

  • Handful coriander

  • Salt and pepper

  • Handful grated mozzarella

  • 15ml cooking oil


Method

  1.  Fry the diced onion and 3 diced peppers in cooking oil for 5-6 minutes along with 1 tsp of the Tex rub seasoning
  2.  Add the Chipotle salsa and cream cheese and stir together
  3.  Add the orzo then pour in the chicken sauce and simmer for 20 minutes, stirring regularly
  4.  Meanwhile, slice 2 large chicken breasts horizontally through the middle to make 4 smaller chicken breasts or use 4 small chicken breasts and coat these in the rest of the Tex rub
  5.  Air-fry the chicken for 12 minutes at 180 degrees while the orzo is cooking
  6.  When the orzo is done stir in the mozzarella and serve topped with the sliced chicken breasts
  7.  Top with coriander
