What you will need


  • 1 Red pepper, sliced

  • 1 Green pepper, sliced

  • 1 Yellow pepper, sliced

  • 1 Onion, sliced

  • 1 Garlic clove, crushed

  • 2 tbsp Chipotle salsa

  • 30g Tex rub

  • 50ml double cream

  • 2 Chicken breasts, diced

  • 50g Cheddar cheese, grated

  • 15ml cooking oil


Method

  1. Add oil to a pan on medium heat
  2. Coat the chicken in Tex rub and fry for 5 minutes until cooked then remove the chicken from the pan
  3. Put the pasta on to boil before adding the peppers and onion to the same pan the chicken was in and fry for a further 5 minutes
  4. Add the Chipotle salsa and double cream to and mix everything together along with some additional pasta water
  5. Add the spaghetti to the pan along with the chicken and toss to coat in the sauce.
