What you will need


  • 500g chicken thighs

  • 30g Mex rub

  • 4 tbsp olive oil

  • Juice of 1 lime

  • 2 cloves garlic

  • 30g parsley

  • 30g coriander

  • 1 red chilli

  • 1 red onion

  • Salt and pepper

  • 1 lemon

  • 1 tbsp red wine vinegar

  • 1 tsp chilli flakes


Method

  1. Add chicken thighs to a bowl and coat with Tex rub, 2 tbsp olive oil and lime juice, set aside to marinade
  2. Meanwhile, prepare the chimichurri by combining chopped coriander and parsley, the chopped chilli, chilli flakes, lemon juice, 2 tbsp olive oil, red wine vinegar, red onion and garlic and stir together
  3. To a griddle pan, normal frying pan or bbq, add the chicken thighs and fry on medium-high heat on both sides until char marks have formed and the chicken has cooked through (roughly 4-5 minutes per side)
  4. Top with the chimichurri and enjoy as a side, as a main meal with chips or salad or as part of a dinner party
