Add chicken thighs to a bowl and coat with Tex rub, 2 tbsp olive oil and lime juice, set aside to marinade
Meanwhile, prepare the chimichurri by combining chopped coriander and parsley, the chopped chilli, chilli flakes, lemon juice, 2 tbsp olive oil, red wine vinegar, red onion and garlic and stir together
To a griddle pan, normal frying pan or bbq, add the chicken thighs and fry on medium-high heat on both sides until char marks have formed and the chicken has cooked through (roughly 4-5 minutes per side)
Top with the chimichurri and enjoy as a side, as a main meal with chips or salad or as part of a dinner party
