What you will need


  • 1 Block halloumi

  • 50g Panko breadcrumbs

  • 1 egg

  • 30g Tex rub

  • 6 Mini tortillas

  • Baby gem lettuce

  • 1 Avocado

  • 2 Large tomatoes

  • Sriracha mayo or chipotle mayo

  • 50ml oil


Method

  1. Chop the block of Halloumi in to 12 pieces by slicing the block in to 4 and then each slice in to 3
  2. To 3 separate plates add the Tex rub, the egg and the panko breadcrumbs, coating the Halloumi in the Tex rub first, then dipping in egg then covering in breadcrumbs
  3. To a pan add the oil and heat on high heat, add each piece of coated Halloumi and fry for 2-3 minutes on each side
  4. To each taco add lettuce, avocado, chopped tomato and top with the Halloumi and mayo
