What you will need


  • 100g Jalapeños

  • 200g Sweetcorn

  • 4 Rashers bacon

  • 100g grated Mozzarella

  • 1 tbsp Cream cheese

  • 30g Tex rub

  • 2 Cloves garlic, crushed

  • 25ml double cream

  • 3 spring onions, chopped


Method

  1. Cook bacon until crispy and set aside
  2. On medium heat add the jalapeños and garlic to a pan and stir for one minute
  3. Add the sweetcorn followed by the Tex rub seasoning and stir for a further minute
  4. Add the cream cheese and stir until it has melted, then pour in the double cream and stir together
  5. Add the grated mozzarella and stir until it melts, top with spring onions and chopped crispy bacon
