Chop the sweet potatoes in half lengthwise, pierce with a fork and coat in olive oil and all of the Mex rub apart from one tsp on both sides then set facing downwards on an oven tray
Add to the oven at 200 degrees for 45 minutes
Meanwhile, combine the chopped red onion, tomatoes, corn, lime juice, black beans, avocado, lime juice and 1 tsp tex rub
Once the sweet potatoes are done, mash with a fork and add 1-2 tbsp filling to each half, top with coriander and optional chipotle salsa
