What you will need


  • 2 sweet potatoes

  • 30g Mex rub

  • 2 tbsp olive oil

  • 400g black beans

  • 200g tomatoes

  • 1/2 red onion

  • 100g sweetcorn

  • 1 lime

  • Coriander

  • 1 avocado

  • Chipotle salsa


Method

  1. Chop the sweet potatoes in half lengthwise, pierce with a fork and coat in olive oil and all of the Mex rub apart from one tsp on both sides then set facing downwards on an oven tray
  2. Add to the oven at 200 degrees for 45 minutes
  3. Meanwhile, combine the chopped red onion, tomatoes, corn, lime juice, black beans, avocado, lime juice and 1 tsp tex rub
  4. Once the sweet potatoes are done, mash with a fork and add 1-2 tbsp filling to each half, top with coriander and optional chipotle salsa
