To a pan on medium heat, add the cooking oil along with the three peppers and onion. Fry for 5 minutes
Add the chopped chicken breast along with the pack of Tex rub and stir for 5-6 minutes until cooked
Add in the uncooked, washed rice and stir until combined with the chicken and vegetables then pour in the chicken stock
Stir together and bring to a boil before reducing the heat to a simmer and adding on the lid
After 5 minutes, stir the rice then add the lid back on for another 5 minutes, then stir again before adding the lid on for 5 more minutes or until water has been disappeared
Remove the lid and stir the rice before serving
Top with optional Chipotle salsa, guacamole, sour cream and coriander
