What you will need


  • 220g rice

  • 2 large chicken breasts

  • 1 onion

  • 1 red pepper

  • 1 green pepper

  • 1 yellow pepper

  • 30g Tex rub

  • 500ml chicken stock

  • 4 tbsp chipotle salsa

  • 4 tbsp guac

  • 4 tbsp sour cream

  • Handful coriander (optional)

  • 15ml cooking oil


Method

  1. To a pan on medium heat, add the cooking oil along with the three peppers and onion. Fry for 5 minutes
  2. Add the chopped chicken breast along with the pack of Tex rub and stir for 5-6 minutes until cooked
  3. Add in the uncooked, washed rice and stir until combined with the chicken and vegetables then pour in the chicken stock
  4. Stir together and bring to a boil before reducing the heat to a simmer and adding on the lid
  5. After 5 minutes, stir the rice then add the lid back on for another 5 minutes, then stir again before adding the lid on for 5 more minutes or until water has been disappeared
  6. Remove the lid and stir the rice before serving
  7. Top with optional Chipotle salsa, guacamole, sour cream and coriander
