What you will need


  • 150g raw prawns

  • 30g Mex rub

  • 1 tbsp olive oil

  • 1 mango

  • 1 avocado

  • 1 chilli

  • handful chopped coriander

  • 8 mini tortillas

  • 2 tbsp yoghurt

  • 2 tbsp FreshMex chipotle salsa

  • 2 spring onions


Method

  1. Make a mango salsa with the chopped mango, avocado, chilli, spring onion, lime juice and spring onions and coriander, stir together
  2. Coat raw prawns in olive oil and Tex rub and on each side until charred (2-3 mins on each side)
  3. Make a salsa yoghurt by mixing the yoghurt and mayo
  4. Add the salsa to toasted tortillas, top with prawns, the yoghurt and chilli
