What you will need


  • 300g chicken breasts (shredded)

  • 1 red pepper

  • 8-10 mini tortillas

  • 1 onion

  • 1 chilli

  • 15ml cooking oil

  • 30g Tex rub

  • 1/2 jar chipotle salsa

  • Handful baby tomatoes

  • 500ml chicken stock

  • 75g mozzarella

  • 1 red onion


Method

  1. Heat the cooking oil in a pan on medium-high heat and add the roughly chopped onion and red pepper, tomatoes and chilli
  2. Once charred add the Tex rub and stir together before adding the chicken stock and chipotle salsa before simmering for 10 minutes
  3. Add to a blender and blitz together then add back to the pan with the shredded chicken, saving a little for a dip
  4. Dip the tacos in the sauce then fry with some of the chicken and some mozzarella and flip halfway until crispy on each side
  5. Add tomatoes and red onion inside and enjoy!
