What you will need


  • 1 Red onion, sliced

  • 280g Extra firm tofu

  • 30g Mex rub

  • 2 tbsp olive oil

  • Guacamole

  • 1 tbsp Chipotle salsa

  • 100ml Beef or vegetable stock

  • 1 Clove garlic


Method

  1. Preheat the oven to 200 degrees celsius
  2. Press the tofu block in a dishtowel or paper towels for 10 minutes until the liquid has been soaked up
  3. Grate the block of tofu until shredded then mix together with 1 tbsp of the olive oil and Mex seasoning before spreading on a baking tray
  4. Bake the tofu in the oven for 10 minutes, meanwhile add 1 tbsp of olive oil to a pan on medium heat and fry the onion for 5 minutes
  5. Add the salsa and beef stock and leave to simmer
  6. Once the tofu has browned slightly add to the pan and stir to soak up the juices
  7. Scoop tofu into taco shells and top with guacamole
