Roll into balls of meat and add to each mini tortilla
In a hot pan, smash down the mini tortilla with the meat face down, so that the ball spreads out to all of the taco (feel free to squash before adding to the pan). Do this in batches so they all fit, keep hot in oven if needed
Let crisp up for 3-4 minutes and flip to the other side, add a cheese slice to each taco, add a little water and put the lid on, steam until cheese melts (2-3 mins)
Top with chopped lettuce, chipotle salsa and pickles
