What you will need


  • 30g Tex rub

  • 1 ribeye steak

  • 50g coriander

  • 25g parsley

  • 3 tbsp olive oil (1 for steak, 1 for sauce, 1 for garlic bulb)

  • 1 bulb garlic

  • 1 red chilli

  • 30g grated cheddar

  • 6 mini tortillas

  • 1 lemon

  • 2 limes

  • 1 onion


Method

  1. Add the steak to a dish and add the sliced onion, half of the coriander, juice fo one lime, olive oil and Tex rub, rub all over the steak and set aside for 30 minutes
  2. Meanwhile, cut the top off of a garlic bulb, add some olive oil, salt and pepper and wrap in foil, put in the oven at 200 degrees until steak is ready and it is roasted
  3. For the sauce, add the other half of the coriander to a bowl with parsley, lemon and lime juice, olive oil, the roasted garlic squeezed out of the bulb and the chilli
  4. Fry the steak on both sides in a pan (1-2 mins on each side until medium rare) let sit for 10 minutes before slicing
  5. Add grated cheddar to the steak pan and add the tortillas on top, push down until stuck, flip tortillas once cheese is slightly crispy
  6. Serve topped with chopped onion and the green sauce
