What you will need


  • 1 onion

  • 1 red pepper

  • 500g beef mince

  • 30g Mex rub

  • 400g can chopped tomatoes

  • 50ml beef stock

  • 6 tortillas

  • 50g grated cheddar

  • 50g grated mozzarella

  • 1 jar chipotle salsa

  • 15ml cooking oil


Method

  1. Add the cooking oil to a pan on medium heat
  2. Add an onion and pepper and fry for 5 minutes, stirring occasionally
  3. Add in the beef mince and stir for 3-4 minutes until browned then pour in the chopped tomatoes and beef stock
  4. Bring to the boil then reduce to a simmer and simmer for 10 minutes, add some salt and pepper then stir
  5. To each tortilla add some cheddar cheese along with a big spoonful of the beef mixture, roll up and place each side by side in an ovenproof dish
  6. Pour over chipotle salsa and top with the remaining cheddar and the mozzarella
  7. Bake in the oven for 15 minutes or until cheese has melted
