Pierce each potato all over with a fork on a microwave plate then add to the microwave for 10 minutes
To a pan on medium heat with some cooking oil, fry the chopped onion and pepper for 5 minutes
Add in the beef mince and break up with a wooden spoon before adding in the Mex rub
Once the potatoes have been in for 10 minutes, check on them then put in the microwave for 2 more 5 minute increments or until cooked
Stir together until the beef mince has browned (3-4 minutes) then add in the chopped tomatoes
Bring to the boil then allow to simmer for 3-4 minutes more
Once the potatoes are ready, half down the middle and smash down the insides, add a scoop of the beef mixture and top with cheese, add to the oven or under the grill for 2-3 minutes or until cheese has melted then top with guacamole and chipotle salsa
