What you will need


  • 4 large baking potatoes

  • 1 red pepper

  • 1 onion

  • 500g beef mince

  • 1 can chopped tomatoes

  • 30g Mex rub

  • 1 Jar chipotle salsa

  • 50g grated cheddar cheese

  • 4 tbsp guacamole


Method

  1. Pierce each potato all over with a fork on a microwave plate then add to the microwave for 10 minutes
  2. To a pan on medium heat with some cooking oil, fry the chopped onion and pepper for 5 minutes
  3. Add in the beef mince and break up with a wooden spoon before adding in the Mex rub
  4. Once the potatoes have been in for 10 minutes, check on them then put in the microwave for 2 more 5 minute increments or until cooked
  5. Stir together until the beef mince has browned (3-4 minutes) then add in the chopped tomatoes
  6. Bring to the boil then allow to simmer for 3-4 minutes more
  7. Once the potatoes are ready, half down the middle and smash down the insides, add a scoop of the beef mixture and top with cheese, add to the oven or under the grill for 2-3 minutes or until cheese has melted then top with guacamole and chipotle salsa
